One-Pan Chicken Alfredo

All the yum without the mess, this one-pan meal can be made quickly on any weeknight.

Ingredients

  • 1 large chicken breastcubed (about 1 cup)
  • 2tbsp. oil
  • 2tbsp. flour
  • 1 3/4cups chicken stock
  • 1 3/4cups nonfat or 1% milk
  • 1tsp. garlic powder
  • 1/2tsp. onion powder
  • 1/2tsp. dried basil
  • 3cups dry pasta(try penne or 8 oz. of linguine)
  • 2cups fresh or frozen broccolichopped
  • 1cup Parmesan cheese, grated

Instructions

  1. In a skillet over medium-high heat, brown chicken in oil.
  2. Add flour, stock, milk, seasonings, and pasta to skillet and stir well.
  3. Bring to a boil, cover and reduce heat; simmer until pasta is almost tender, stirring occasionally.
  4. Add broccoli, then cover and cook until broccoli is tender.
  5. Remove from heat and stir in cheese.
  6. Refrigerate leftovers within 2 hours.
