Mac and Cheese with Broccoli

What better way to get some greens than mixed into a childhood favorite?

Ingredients

  • 2cups uncooked elbow macaroni
  • 4tbsp. flour
  • 2cups 1% milk
  • 2cups low-fat cheddar cheeseshredded
  • 1/2tsp. ground black pepper
  • 2cups broccolicooked and chopped

Instructions

  1. Cook macaroni according to package directions.
  2. Drain cooked macaroni and return to pan.
  3. While macaroni is still warm, sprinkle in flour and stir thoroughly.
  4. Over medium heat, slowly stir milk into the macaroni.
  5. Add the cheese and pepper.
  6. Stir over medium heat until the milk and cheese thicken into a creamy sauce (about 7–10 minutes).
  7. Stir in the broccoli until heated through.
  8. Taste; add a small amount of salt if needed.
  9. Refrigerate leftovers within 2 hours.
