Brazilian Black Beans and Sausage

  • 2tsp. oil
  • 8oz. low-fat polish kielbasa sausagecut into bite-sized pieces
  • 1 large onionchopped
  • 1clove minced garlic(or 1/4 tsp. garlic powder)
  • 1 green bell pepperchopped
  • 1cup uncooked rice
  • 15oz. canned black beansdrained and rinsed
  • 2cups water


  1. Heat oil over medium-high heat (350°F in an electric skillet); sauté sausage and onion until onion is translucent.
  2. Add remaining ingredients.
  3. Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 20 minutes.
  4. Refrigerate leftovers within 2 hours.

Recipe Notes

  • Add mushrooms or red bell peppers for variety.
  • If you like spicy food, add some cayenne pepper or chili powder.
  • Try brown rice and simmer for 10 more minutes.
  • Cook your own dry beans. One can (15 oz.) is about 1 1/2 to 1 3/4 cups beans.
